Matka Kulfi with dry fruits

Kulfi is a popular frozen dairy dessert from the Indian subcontinent. It is often described as "traditional Indian ice cream. It is popular throughout India, Sri Lanka, Pakistan, Bangladesh, Nepal, Burma (Myanmar), and the Middle East. Indian dessert or Kulfi is famous all around the world and have a good demands in restaurant. Kulfi is similar to ice-cream but it has a more denser and thicker cream. It also content a some dry fruits in it like almonds, Saffron, cashew, pistachios etc. There are also many different flavors of Kulfi like mango,rose etc.

Serve:2-3

Ingridents:

• 3 cup Milk full cream
• 1 cup Cream / Malai
• 2 tbsp. Milk powder
• 2 tbsp. Almonds / Badam chopped
• ¼ tsp. Kesar / Saffron
• 2 tbsp. pistachios chopped
• 2 tbsp. cashew / Kaju chopped
• ¼ cup sugar

Procedure:

1. Firstly, in a kadai heat 3 cup milk and 1 cup cream.
2. Also, add 2 tbsp. milk powder. Alternatively, add khoya / khova / mava for rich flavour.
3. Stir continuously; making sure everything is combined well without any lumps.
4. Gets the milk to a boil stirring occasionally.
5. Add 2 tbsp. almonds, 2 tbsp. pistachios, 2 tbsp. cashew and ¼ tsp. Saffron.
6. Boil the milk for 10 minutes or more stirring occasionally.
7. Keep boiling till the milk reduces to half or thickens.
8. Add ¼ cup sugar and stir until the sugar dissolves.
9. Boil for another 5 minutes, or till milk thickens.
10. Cool the mixture and transfer to a small matka or cups.
11. Cover the matka with cling wrap or aluminium foil and freeze for 8 hours.Finally, garnish matka malai kulfi with chopped nuts and serve chilled.
