Sizzling Tandoori Fish

Sizzling Tandoori Fish
Tandoori Fish is a lovely, melt-in-mouth barbecued fish recipe with prominent flavours of mustard, hint or lemon, and a kick of the traditional fish spices with some crispness. A tandoor is a cylindrical clay oven. It is a popular dish from the Indian subcontinent and has become sought-after in other parts of the world.

Ingridents:
  • Surmai/King mackerel/Seer fish – 750 grams, gutted and rinsed.
  • Mustard oil – ¼ cup, heated to the smoking point & then cooled/
  • Yogurt – ¼ cup.
  • Turmeric powder – ½ tsp.
  • Red chilli powder – 1 tbsp. (Byadgi Mirch)
  • Salt – to taste.
  • Yellow mustard seeds/Rai ki dal – ½ tsp., ground.
  • Ajwain/Carom seeds – ½ tsp.
  • Ginger – 1 & ½ inch, finely crushed.
  • Garlic – 15 cloves, medium-sized, finely crushed.
  • Lemon juice – ½ tbsp.
Procedure:
  1. Heat mustard oil to the smoking point and then let it cool. To make the tandoori marinade, combine mustard oil, yogurt, turmeric powder, red chilli powder, salt, ground yellow mustard seed, ajwain/carom seeds, ginger, garlic, and lemon juice.
  2. Give it a whisk.
  3. Add the pieces of king mackerel fish to the marinade.
  4. Gently rub the marinade on the fish and cover the bowl with a cling wrap or a lid. Pop the marinated fish into the freezer for the next 24 hours or at least overnight.
  5. Take the fish out of the freezer and let it thaw. It usually takes 2 hours. Prepare the tandoor/barbecue and place the individual pieces of fish on the banana leaves.
  6. Do not completely wrap the fish in the banana leaf. Just fold the leaf.
  7. Place the fish on the barbecue grill. The coals should not be on fire per se. They should be hot and radiating heat.
  8. Cover the tandoor with its lid and let the fish cook for about 4-5 minutes.
  9. Carefully turn the fish covered in banana leaf with the help of a pair of tongs. Cover and cook for another 3-4 minutes.
  10. Remove the grilled fish onto the plate using a pair of tongs.
  11. Tandoori fish is ready. Serve immediately with onion slices and lemon. Enjoy!
