Dhokla (Khaman)
Khaman/Dhokla is a vegetarian culinary dish that is found mainly in the Indian state of Gujarat and parts of adjacent states. It is made with a fermented batter derived from chickpeas. Khaman/Dhokla can be eaten for breakfast, as a main course, as a side dish, or as a
snack. Dhokla is very similar to Khaman, however Dhokla is made of batter derived from mixture of rice flour and chickpea flour, whereas Khaman is typically made from Chickpeas gram and looks yellow in color.

Ingredients: For Batter:
  • 2 Cups Gram Flour (Besan)
  • 1 Eno Packet (5 Grams)
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Turmeric Powder
  • Water around 1 cups
  • Refined Oil
For Tangy Gravy
  • 1½ tablespoon Refined Oil
  • 3-4 Green Chilies
  • 8-10 Curry Leaves
  • 1 teaspoon Black Mustard Seeds (Raai)
  • Sugar
  • Salt
  • 1 Lemon
  • Coriander Leaves
  • 2 cups of water.
Procedure: For Khaman/Dhokla
  1. Take 2 cups of Gram Flour (Besan) in a bowl.
  2. Add 1 teaspoon of sugar, salt and turmeric powder (Haldi Powder). Mix it well.
  3. Now add around 1 cups of water and mix the batter very well. Batter should be not too thick or too thin. Mix it well till there are no lumps.
  4. Now add the Eno in it and mix it well and keep it rest for 10-15 minutes
  5. Now take a large size or medium size still pot and 5-6 cups of water in it.
  6. Put it on the flame and cover it with the lead.
  7. Wait for the light boil.
  8. Now take a aluminum container of medium size. Oil the container very well.
  9. Now again give a little mix to the batter and put the batter into the oiled aluminum container.
  10. Now put a small stand in the steel pot containing water and put the aluminum container containing the batter on the stand into the steel pot.
  11. Cover it the steel pot with lead and allow it to cook for 10-15 minutes at low flame.
  12. After it gets cooked take it out carefully and put the cooked Khaman/Dhokla in to the plate.
Tangy Gravy
  1. Take a pan and put 1½ tablespoon of refined oil in it.
  2. Now add 1 teaspoon of Black Mustard seeds (Raai)
  3. As the seeds start popping add 3-4 Green Chilies slit and give it a little cook.
  4. Now add 8-10 curry leave and give it a mix.
  5. Add to cups of water and give it a boil.
  6. Now add sugar and salt as per your taste.
  7. After all this add lemon jucie as per your tangy taste and give it a mix.
  8. Now turn of the flame and allow it to cool down.
Mix it all together
  1. Now cut the Khaman/Dhokla into large pieces of cubes.
  2. Now carefully spread the tangy gravy on Khaman/Dhokla.
  3. Now garnish it with finely chopped coriander leave.
  4. Serve the juicy Khaman/Dhokla.
